From my point of view, it will somehow become a shoe, because in his very manageable fruit ranking, the banana is also in first place. Luckily for him, because bananas are available all year round. The sweetness of the dough of my banana pancakes depends on the ripeness of the bananas. So if the dough is not sweet enough for you, you can serve it with sugar, cinnamon sugar or icing sugar. Or different kinds of fruit sauce, sweet sauces or syrup or whatever you feel like.
The Perfect Shape With The Classic Banana Pancakes
If the shape is not perfectly round and egg-shaped, this does not affect the taste. Either way, they become tasty and fluffy. Maybe I’ll have a pancake pan for classic banana pancakes, as you can probably find in every American household. I would be tempted to get the sweet little pancakes to go evenly. I could also “conjure up” crepes or fried eggs with it. I’m always torn, because unfortunately these pans aren’t exactly cheap and I need space for them.
A Wonderful Banana Recycling Of Ripe Bananas
For me, by the way, pancakes are the ideal way to recycle leftover bananas. They are one of my emergency recipes when our bananas have not been completely eaten at the preferred “banana ripening stage”. Both my men and I have a preferred degree of ripeness for each of them. Often this is unfortunately exceeded faster than you can see and I have overripe, unloved bananas in my fruit basket. In this case we have delicious banana pancakes. And after all, every generation likes them 😉

- Sieve the flour, baking powder and a generous pinch of salt into a large bowl. In a separate mixing bowl, mash the very ripe bananas with a fork until smooth, then whisk in the eggs, vanilla extract and milk. Make a well in the centre of the dry ingredients, tip in the wet ingredients and swiftly whisk together to create a smooth, silky batter.
- Heat a little knob of butter in a large non-stick pan over a medium heat. Add 2-3 tbsp of the batter to the pan and cook for several minutes, or until small bubbles start appearing on the surface. Flip the pancake over and cook for 1-2 mins on the other side. Repeat with the remaining batter, keeping the pancakes warm in a low oven.
- Stack the pancakes on plates and top with the banana slices, a glug of sticky maple syrup and a handful of pecan nuts, if you like.
